As Easter approaches, many of us ponder our faith. And, since this year Passover and Easter coincide, more of us are taking time to think about what it all means.

I went to a super Catholic university somewhere in the middle. Like a school where students were encouraged to attend any one of the 26, yes 26, masses held between Saturday at 4:30pm and Sunday at 6pm. A university where the Old Testament was studied as a history and taught (at the time) by the sole interpreter of the Dead Sea Scrolls. A school where a gentleman caller might ask you on a date to mass – this was a big deal.

Back then, the student body was pretty homogenous – I think it was something in the neighborhood of 90+% Christian and of that over 80% Catholic. Being surrounded by mostly Catholics and beer, oh and nickel purple passions, led to some more than riveting late night philosophical discussions and revelations about Jesus.

One such late night post purple passions or quarter beers we engaged in the most philosophical of all discussions about God and Jesus. So many questions. We all wondered was Jesus really the son of God? Did he really rise from the dead?

After much discussion, my very wise roommate summed it up perfectly for all of us. She said: I don’t know if Jesus was the son of God or rose from the dead. All I know is that Jesus was a really good guy who said a lot of really good things that lasted a really long time.

Makes sense.

One thing that I am certain will rise – and rise three times – is this sweet, braided Easter bread.

Tiny Apartment Tips:

  1. Clean as you go and reuse your prep bowls – you can temperate your eggs in the same measuring up that you used to measure your flour
  2. Active Yeast and Instant Yeast can be used interchangeably – I know because I Googled it
  3. Set aside enough time as while Jesus took three days to rise, this bread requires 90 minutes to rise and then 45 minutes to rise again

Sweet Braided Easter Bread (serves a whole bunch of people of any faith)

Ingredients:

  • 2/3 Cups Whole Milk – since I don’t drink milk, I keep little Stop and Shop single serve milks on hand – they last forever in your pantry until opened, and then a few days in your fridge
  • 5 TBSPs of Sugar – I use Domino Sugar – always have, always will
  • 1 3/4 TSPs of active dry yeast…but I couldn’t find that – so used Instant Yeast. Also – 1 3/4 TSPs is LESS than 1 packet…so, yes, you have to measure it out
  • 2 Large Eggs at room temperature – you must temperate your eggs
  • 2 1/3 C of Flour– now, the recipe actually called for 2 3/4 Cups…but I screwed up and used less – it was all fine – there was math, but an Easter Miracle made everything OK
  • 1 TSP Kosher Salt – because we welcome all religions – The Morton Salt is good and less expensive than those designer Kosher brands…
  • 1/2 C = 1 Stick unsalted butter softened and sliced…I only had salted butter so I just used less Kosher Salt
  • Some melted butter

1. In a small sauce pan, gently heat the milk over a low flame to 115 degrees – this happened super quick – so watch it. I used a candy thermometer, but any thermometer will do

2. Pour the heated milk into a 2 Cup measuring cup and stir in 1 TBSP of sugar and add the yeast – check out my awesome tiny Le Creuset rubber prep bowl! Whisk it all together.

3. Add the eggs one at a time and whisk together

4. Once combined – set aside and wait for the first rise – the yeast will activate and make the mixture all foamy – this takes about 5 – 7 minutes

5. In the mean time – combine the flour, remaining 4 TBSPs of sugar and salt in the bowl of your KitchenAid stand mixer with the bread attachment. This was the debut for my bread attachment!

6. Pour in the foamy once risen mixture and begin to mix over medium speed

7. Slowly – one pat at a time – add in the butter

8. Jack up the mixer to medium/high and let the kneading begin – knead on med/high for 5 minutes or until the dough is soft and smooth!

9. Transfer the dough into a bowl brushed with melted butter.

10. Brush the top of the dough with even more butter, cover and set aside for the second rise – about 90 minutes in a warmish place – Dough should double in size – makes me wonder – did Jesus get bigger?

11. After the miracle second rise has occurred – Put some flour in a tiny bowl and dip your hands in! The dough is sticky- so flouring your hands will help.

12. Divide the dough into three equal parts. Form each into a long loggish shape and set on a cookie sheet, lined with parchment paper and lightly floured. Now, since I didn’t use enough flour from the get go – I was more generous with the flour here.

13. Pinch one end of each log together and braid away!

14. Cover the beautifully braided dough with Saran Wrap and set aside for the third and final rise – Wait 45 minutes

15. Preheat the oven to 375 degrees

16. Remove the Saran Wrap from the bread and brush it with butter before placing in the oven

17. Bake for 20 – 25 minutes or until the internal temperature of the loaf is 190 degrees.

This tasty bread takes some time but is well worth it. And, while I’m no artist – I think the braiding is impressive. I mean it’s no miracle – but, this Easter weekend it did rise three times.

I’m still not sure what I believe (sorry Mom). But, when I question what it all means I always revert to the wise albeit boozy words I heard so long ago – No matter how you slice it, Jesus was a really good guy, who said a lot of really good things that lasted a really long time. Much longer than this sweet Easter bread will last, indeed.

Super Bowl Sunday is just around the corner. If I read the Roman Numerals correctly, it’s Super Bowl 48..Not 49-er. And while, we, as New Yorkers, lament that our (or Jersey’s depending upon how you look at it) hometown team won’t be playing, we rejoice in the fact that at least one Manning will be there….Hopefully leading the Broncos to victory.

And, let’s be honest, we’re just happy it’s not the Patriots.

I know it’s almost Super Bowl Sunday because I saw the Budweiser Clydesdale horses outside of my apartment the other day. That’s right, a team of boozy Broncos led by some Cowboy towing a ton of beer. Right here on 67th St. Only in New York, Kids.

And, then there are all of the cooking tips on TV. Seem that no one eats like a Saint on SBS. Most chow down more like Cardinals – twice their weight in one day – and view Super Bowl Sunday as an excellent opportunity to consume 8million tons of guacamole – always seemed odd to me. Maybe those Texans started this tradition of guac. Americans pride themselves on creating 7-layer dips in the shapes of football stadiums, wrapping billions of cocktail weenies in crescent dough and consuming copious amounts of …beer.

I, on the other hand, prefer to provide my guests with Giant Soup-er Super Bowl soups. Last year, I made the Soup-Er simple Taco Soup…..this year, I’ll be mesmerizing Manning fans with a not as simple, but equally delicious, White Bean, Cauliflower, Chicken Sausage Soup. A soup that may even entice my Seahawk friends Jet-ing in from the west.

Tiny Apartment Tips:

  1. If you don’t have a hand held blender – get one. They don’t take up a lot of space, aren’t that expensive, come in pretty colors (mine is pink) are dishwasher safe and make an easy job of pureeing your soup.
  2. Timing is everything – since you’re having people over, clean as you go – you don’t have counter space for all of those dirty pots & pans anyway and your kitchen probably doubles as your bar, coat rack, convening space for friends and Titans of Industry.
  3. If you don’t have a Viking range, no worries, yours will be just fine.

Soup-Er Super Bowl Soup (serves 6)

Ingredients:

    Super Sausage from Somewhere Upstate – Well East of Buffalo, home of the Bills

    4 Chicken-Cheddar-Spinach Sausage links Sliced –  mine were from Oscar’s Smoke House upstate –  because Rachael Ray says so…PS, they ship to NYC

  • 2 Cans White Northern or Cannolini beans – the big white ones not the Redskin-ed ones – rinsed
  • 2 Cups Cut Cauliflower – don’t be an over Packer – just 2 loose cups will do
  • 1 Medium Yellow Onion Diced
  • ½ Small Shallot diced
  • 2 Cups of fresh spinach leaves
  • 1 Bay leaf
  • Leaves from 2 sprigs of fresh Thyme – ok, mine are frozen – not in the refrig-e-Raider, but in the freezer
  • 4 Cups of Good Chicken Stock – like you’d ever use ‘bad’ chicken stock?
  • 1 Cup of Water
  • EVOO
  • Salt and Pepper

Directions:

1. Preheat oven to 425 degrees
2. Spread the cauliflower on a lined baking sheet (Reynolds Wrap pan-lining paper is my fave), sprinkle with EVOO and salt and gently mix

3. Put Cauliflower in to oven and roast for :30mins

4. Meanwhile…..In a large stock pot – Le Creuset, s’il vous plait – over medium heat, sauté the diced onion and shallot in about 2 tbsp of EVOO until well softened and sorta translucent – about :10 mins

5. Toss in a Bay Leaf for flavoring….

6. Add 4 Cups of Chicken Stock and 1 Cup of water

7. Add in the roasted cauliflower and the Thyme leaves

8. BTB / RTS – bring to boil, return to simmer….but, you knew what I meant

9. Simmer for :25 minutes until the cauliflower is well softened. Keep an Eagle’s eye on your simmer – it’s an art, simmering.

While that’s simmering….

9. In a frying pan over medium/high heat, add 1 tbsp of EVOO and sauté the sausage slices until browned.

11. In the sausage-y pan, add the spinach and wilt – :04 mins ish

13. Back to the large stock pot….After :25 minutes Turn off heat on Stock Pot…….Remove the bay leaf

14. Stir in 1 15oz can of White Beans and simmer another :05 minutes

15. Add pepper to taste – about 4-5 turns of a mill

16. Puree mixture with pretty pink hand held blender until smooth – you may have to chase the chunks of cauliflower…Like a Lion, Panther or a Bengal Tiger might chase down its prey.

17. Stir in 1 Cup of Cannolini / Northern White beans and the cooked sausage and the spinach. I like a soup that eats like a meal…so, I add no more stock… you do what you want, you know what I’m doing…If your guests are hungry as Bears, Ram in another can of beans to make it more stew-ish. You can also stir in some cream, don’t need to, but can – whatever you want. You’re the Chief Chef here.

18. Have some spice-loving Buccaneers coming over? You can, at this point, stir in a few dashes of Gindo’s Fresh and Spicy Spice of Life…for an extra point or an onside kick!

20. Serve warm (just in a simple soup bowl, no need for the formality of fine china on gilded Chargers).

Add some yummy, crusty bread  – I paid just $1.19 for a baguette at Fairway today! At that price, I felt like a Steeler of breads!

Secret Mushrooms: Thanksgiving Stuffing with Morels

Everyone has a food or two that they just won’t eat. I, for example, do not eat raisins (yes, I eat grapes) or chopped coconut. Don’t get me wrong, I enjoy an occasional Pina Colada and am happy to drink coconut milk. I just can’t stand the texture of raisins or raw coconut – no macaroons for me.

Some time ago, I was dating someone who refused to eat mushrooms of any kind. Seriously? We were on the verge of spending Thanksgiving together and his aversion to mushrooms put me in quite a conundrum. I mean, I had been making the Turkey and Stuffing for Friends-Giving since I was in college and had really perfected it.

And part of that perfection is morel mushrooms, the bacon of the mushroom family, and a key ingredient in my Thanksgiving stuffing. I had a difficult decision to make….Eliminate the mushrooms? Make two separate batches of stuffing? Or, just don’t tell him and hope for the best.

Hmmmmm….This particular boyfriend had a career where knowing things and figuring things out were sort of important. Like part of his job and such.

What he might not have known is that Morels are prized by gourmet chefs around the world. In the US, they are known by many names including Hickory Chickens, Molly Moochers, Merkels and even Miracles. In our house growing up, we called them Bacon Mushrooms because of their smoky, rich flavor.

So, I couldn’t imagine Thanksgiving without morel mushrooms…I took the risk and I put them in and didn’t say anything. What? Like you’ve never done that?

Old School Stuffing with a Bacon-y Twist (serves 8)

Tiny Apartment Tips:

  1. You can make this the night before to save counter space and pots and pans on day of
  2. Dried morel mushrooms are tricky to find…But, Eve’s Garden on West 23rd St usually has them
  3. You can never have enough chicken stock on Thanksgiving

Ingredients:

    2 Medium Onions – diced

  • 4 – 6 Celery Stalks, peeled and diced
  • 2 Sticks of Butter
  • 1/4 Cup of Rosemary – chopped small
  • 4 Slices Wheat Bread – cubed
  • 4 Slices Portugese or White Bread – cubed
  • 1 Bag Pepperidge Farm Herb Seasoned Stuffing
  • 1 oz Dried Morel Mushrooms
  • 1 Box of Chicken Stock
  • Salt and Pepper

1. The night or two nights before, cube the white and wheat bread. Put into a baking dish, cover with plastic wrap. Poke some holes in the wrap and set aside. This will stale up the bread a bit. You can also just toast the cubed bread in a single layer on a cookie sheet in the oven at 200 degrees for about 10 minutes to crust it up a bit.

2. Put the dried morel mushrooms in a medium bowl and cover with chicken stock to rehydrate – this takes about an hour or less. I usually buy Whole Foods 365 brand Chicken Stock – it’s not any more expensive and very good.

3. Preparation – so important. Dice the onions and celery and finely chop the rosemary leaves.

4. Remove the morels from the chicken stock and rinse gently to remove any residual dirt

5. Chop the morels into small pieces

6. In a large skillet over medium-low heat, melt two sticks of butter – I use salted and then I don’t need to add more salt later

7. Add the onions, stir for about 2 mins and then add celery and cook until softened – about :10 minutes. You want the celery to maintain some of its crunch.

8. Add the chopped rosemary and morel mushrooms and stir to combine

Gently stir in the Magic Morels – Tastes Like Bacon

9. Add salt and pepper to taste – if you use salted butter and/or chicken stock with sodium, be sparing in any addition of salt

10. Pour in 1 to 1 1/2 cups of chicken stock and stir to combine and warm through

11. In a large bowl, combine 1 bag of Pepperidge Farms Herbed Stuffing and the cubed, staled bread

12. In stages…like 1/2 cup at a time…pour the buttery, oniony, celery, morel-y, rosemary, chicken stock-y mixture over the stuffing/cubed bread mixture.

Add moisture in stages – you don’t want it soggy

13. Gently fold together the ingredients until moistened and combined. You don’t want the mixture to be soggy…especially if you are going to stuff your bird. The stuffing will absorb the juices from the turkey during the roasting process

14. Allow to cool entirely before stuffing in the bird. You can choose not to stuff the bird…but will miss out on the flavorization that the turkey juices provides to the stuffing

15. Depending upon size of your bird, you will have extra stuffing. Put this extra in a baking dish and reheat prior to serving. You may need to add a little extra chicken stock to keep it moist and delicious. Remember anything not stuffed in the bird won’t benefit from the turkey juices.

Thanksgiving that year was a big success. The boyfriend ate the stuffing and never caught on to the secret mushrooms. I’m not saying lying is a good thing – it’s not. But, I just couldn’t give up my bacon-y morel mushrooms. Some secrets are worth keeping.

The Time is Right: Mexican Marinated Lime-ly Grilled Skirt Steak

The life of the food blogger is very complicated. There’s like math when the recipe feeds 8 but I only want to feed 4 and there’s like conversions from liters to ounces and stuff.

But, maybe the most challenging thing is getting the timing right. See, we hope to guide our reader(s) through the perfect preparation of all holiday meals – so we have to actually prepare and write about the holiday meal before the actual holiday. Like celebrating Thanksgiving on the 3rd Thursday of November, Christmas on the 15th of December or July 4th on the 1st.  You understand.

This week it means that instead of celebrating Cinco de Mayo (not Mexican Independence BTW) on Sunday with the rest of the margarita revelers, I celebrated Dos de Mayo last night.

The only tricky part is explaining to dinner guests that we are in full on Mexican mode 3 days shy of the actual Fiesta.

Total Time: 24 Hour Marinade…Then about 7-8 Mins of Grilling…:10 minutes resting…:05 minutes slicing

Tiny Apartment Tips:

  1. Your kitchen is small…And this is a big feast, so prepare in stages. I grilled the meat in the afternoon and reheated for dinner
  2. Skirt Steak is a long, big steak…And you only have one grill pan (my new All-Clad one is awesome) So – you will need to slice the steak in half and cook in two batches
  3. As always – grilling causes a lot of smoke and the vent above your stove top doesn’t really do anything…Open the windows and front door to your apartment to ventilate. Plus the wafting of steaky aroma into the hallway may attract that certain someone in the apartment next door
  4. And remember to close the doors to your bathroom and bedroom whilst grilling – otherwise your bed linens and bath towels will soak in the steaky smell

Ingredients:

    1 2lb Skirt Steak – I got mine at the Whole Foods meat counter… and, while pricier than I might have thought it would be, it was beautiful

  • The juice from 8 Limes
  • 5 (yes five) giant cloves of Garlic diced
  • 1/4 C of Soy Sauce
  • 1 Big Bunch of Cilantro – chopped
  • 1 TSP Cumin Powder
  • 1 Jalapeno Pepper – diced – you can remove the ribs and seeds if you’re averse to too much heat…I did
  • 1 Squirt – Call it a TBSP of Ketchup
  • The Zest of 1 Lime
  • 1/4 Cup Olive Oil
  • Gindo's Spice of Life pepper sauce

    Dash upon Dash of Gindo’s Spice of Life hot sauce – as my guests said ‘fresh and delicious’

1. Squeeze the juice of 8 limes into a bowl

2. Add the zest of 1 lime

3. Stir in the Garlic, Soy Sauce, Cumin Powder, Jalapeno, Ketchup, Dashes of Gindo’s Spice of Life, Olive Oil and Cilantro

4. Slice that giant Skirt Steak into two equal halves and place each in a ZipLoc bag

5. Cover each half of Skirt Steak with equal parts of the marinade

6. Seal the bags and put them in the Fridge over night

…..The Next Day

7. When you wake up.. Flip the bags over to ensure equal marinating on both sides of the meat. And leave them in the Fridge for the day.

8. Remove the marinated meat from the Fridge :35 – :40 minutes before grilling to temperate

9. Heat a grill pan over medium/high and spray with Pam Olive Oil Cooking Spray

10. Add the first 1/2 Skirt Steak and cook on one side for 3 – 4 minutes

11. Flip and cook the second side for :03 mins

Side 2: Pretty Grill marks don’t matter, cuz you’re slicing it

12. Remove from the pan and let rest while you repeat with the second 1/2 of Skirt Steak

13. Let second half rest for at least :10 mins

14. Slice AGAINST the grain – this means the lines on the steak run one way and you shall cut the other way

It’s Easter weekend…And, there’s a new pope. So, it’s like a totally important Easter weekend.

Thumper – The Mother To Be

One thing about Easter that always confused me is the mystical Easter Bunny who brought eggs to us on Easter morning. I mean, rabbits don’t lay eggs. I’m certain of this because growing up we had bunnies…lots of bunnies. It started with Snuggles and then we added Thumper. The guy that sold us the bunnies assured us that both Snuggles and Thumper were males…and, we naively believed him.

But soon we had many mini Snuggles and Thumpers living in the rabbit hutch in our back yard. That’s right, Snuggles may have been male but Thumper was definitely female and the proud bunny mama to many little bunny pups.

We were young when we the bunny breeding began and watching the miracle of life in our own back yard was pretty cool. At first, we didn’t know what was going on…Thumper was lethargic and seemed to be gaining weight. ‘He’ spent a lot of time in the covered part of the hutch and didn’t want to be held. Meanwhile, Snuggles hopped around all boasty and proud…The, one day when we went out to feed the rabbits we noticed four tiny bald bunnies peeking out from under Thumper’s fur. What? The light went on: Thumper was a lady rabbit and now the mother of four.

Like I said, we were young. We had heard about rabbits reproducing like, well, rabbits. But didn’t really know exactly how that all happened. One thing was certain, however, these bunnies were definitely not hatched from eggs.

So, I don’t really get the Easter Bunny who brings Easter Eggs. I’m sure I could Google the origin of this magical egg-bearing rabbit – but, I’m not going to ruin the mystery.

In addition to the Easter Bunny and silly flowered bonnets, Brunch is synonymous with a traditional Easter celebration.

If your brunch guests are multiplying like rabbits you’ll want to serve an easy yet impressive and traditional meal.  Serving rabbit at Easter Brunch just seems wrong. But eggs, now that’s a different story.

Individual Easter Egg Cups (serves 6 if this is all you’re serving, but most likely there will be an Erik Estrada aka Egg Strada, a fruit salad, a frittata and maybe even a ham)

Tips for tiny apartments of any size:

  1. Buy extra slices of prosciutto; you will inevitably tear one or two during the prep and you may even want to snack on a slice or two
  2. Use your cup cake tin…not your Texas tin – if you’re lucky enough to have room in your tiny kitchen for both
  3. Temperate (bring to room temperature) your ingredients…everything works better this way

Ingredients (why am I moved to start saying ‘ingredientses’ like Teresa Giudice – pronounced this season as Ju-DEE-chAY)

  • 12 eggs at room temperature
  • 1 10oz package Birdseye frozen chopped spinach
  • 2 Cloves Garlic minced
  • 1/2 Shallot diced
  • 3 TBSP of heavy cream at room temperature
  • 14 slices of prosciutto – sliced thin
  • Olive Oil
  • Salt & Pepper

Preheat the oven to 375 degrees

1. In a microwave safe bowl, defrost the spinach – remove from packaging, place in bowl and microwave for 6-7 minutes, stirring about halfway through

2. Squeeze the excess water from the defrosted spinach. Wrap the spinach in a kitchen towel and squeeze the water out. Don’t worry about staining the towel. Spinach is organic and the green residue on the dish towel will wash out. Best to rinse the towel immediately following the squeezification and then throw it in the wash.

3. In a medium sauce pan over medium heat heat two tablespoons of Olive Oil

4. Throw in the minced garlic and diced shallot and saute until fragrant – about 2 mins

5. Add the spinach and stir to combine

6. Heat through – about :02 mins

7. Turn the heat down and pour in the heavy cream. Stir to combine

8. Take one piece of prosciutto and line each cup of a 12-cup cupcake tin. Don’t worry if the pieces tear a little…just make sure the sides and bottom of each cup are covered with the salty meat

9. Layer on a tablespoon of the cream spinach to the prosciutto

10. Crack one egg on top of each prosciutto – spinach cup

I crack the eggs into ramekins and then pour into each cup cake well

11. Bake in the oven for :15 mins – until the eggs are set, but yolks are still runny. You may want to turn the pan halfway through the cooking process so that all eggs are uniformly baked. But, then again, you may have runny egg eaters and more done egg eaters. Your call.

12. Using a large spoon, gently lift each Easter Egg Cup out of the tin and transfer to a serving plate.

13. Serve. If perfectly prepared, the yolks will be runny and delicious and the prosciutto will be somewhat crispy and hold its cup shape.

Bunnies don’t lay eggs. And, the Egg-Toting Easter Bunny is still a mystery to me. All I know is that if a bunny breeder promises you the two rabbits he’s selling are male – it’s probably a lie. And that these Easter Egg Breakfast Cups are an easy way to impress your Easter Brunch guests.
