Pretty Pea Soup – With Homemade Creme Fraiche and Bacon Bits

I sorta love vanity plates. I was driving a ton for a job – with a colleague/friend – up and down the west coast training people to sell fragrance. The countless hours in the car led to some in depth conversations….But, by about week 2, we already knew pretty much everything about each other, each other’s families, lives, histories, first loves, last loves, secret loves etc.

So we needed another way to pass the time. And, we were in California – land of the vanity plate. Coming from NYC and without a car of my own at the time, I hadn’t had a lot of experience with deciphering vanity plates. So, this became one of our favorite driving games. It’s like figuring out what text abbreviations mean now.

On our journey, we ran into some great plates including:

NA HE DNT: no explanation needed

8MPG: A Hummer owner making no excuses

L8ASUSL: For the terminally tardy

4RCEBWU: For the Star Wars junkie

One of my favorites, though, read simply ‘NOPCME’. Nopcahmah? Nopchemey? We spotted this one in the parking lot of a hotel and struggled to determine what it meant. And, then we found out that the owner was a urologist….And, his license plate advertised his business: No Pee? See Me!

So I thought about making Pea Soup…and realized that I had a ton of other vegetables that needed using. And I made…

Peas and More Pea Soup (Serves 6-8)

Ingredients:

  • leeks

    Fresh and Dirty Leeks

    2 slices of Bacon cut into small pieces

  • 2 Cups Chopped Leeks – 2 leeks, whites and light green parts – they’re usually pretty gritty, so wash them well
  • 1 Cup Chopped Onion
  • 2 Carrots, peeled and chopped small
  • 1 Sweet Potato – peeled, chopped and roasted until soft (see below)
  • 2 10oz packages of Birdseye or 365 Brand Frozen Peas – I used a combo of both
  • 5 Cups of Chicken Stock- I use Whole Foods 365 brand, it’s very well priced, rich and delicious
  • 1 TSP fresh Thyme leaves
  • 1 TSP Salt

    Submerge Leeks to Clean

    1 TSP Pepper

  • Olive Oil
  • A tad of Gindo’s Spice of Life Fresh and Spicy Pepper Sauce – to taste
  • Creme Fraiche for garnish

Sweet Potato Prep:

    Preheat Oven to 425 degrees

  • Line a rimmed baking sheet with Reynold’s Wrap Pan Lining paper – parchment side up
  • Spread the Sweet potato dices in a single layer on the parchment and gently sprinkle with Olive Oil – do not salt!
  • Bake for :08 mins, then toss and bake an additional :07-:08 mins until softened but not browned
  • Remove from the baking sheet and set aside

1. In the bottom of a large heavy bottomed pot (my 6qt Le Creuset, for example), heat 1 TBSP of Olive Oil over medium heat

2. Add the bacon pieces and render until crispy

3. Remove the bacon and set aside

4. To the bacon fat add a TBSP of olive oil and then add the carrots and stir – about :04 mins.

NOTE: You want to add the carrots first because they take longer to soften

5. Add the leeks and onion to the carrots and cook until softened – about :10-:12 mins stirring occasionally

6. Add the chicken stock, sweet potatoes, thyme, salt and pepper and bring to a boil

7. Reduce to a simmer and add the frozen peas

8. Simmer until the peas are softened – about :04 mins

9. Turn the heat off and allow the soup to cool – while it’s cooling, you can wash all of the prep bowls, knives and cutting boards you may have used

10. Set up a Puree Station: In my case…A KitchenAid blender and a second empty heavy bottomed pot on low

11. Transfer a few ladles of the soup to the blender and puree

12. Pour the pureed soup into the second pot and repeat until all of the soup is pureed

13. Serve with a garnish of Creme Fraiche and Crispy Bacon Bits

NOTE: Making your own Creme Fraiche is super easy – mix equal parts heavy cream and sour cream in a bowl. Cover with plastic wrap and leave out on a counter over night. In the morning, put it in the fridge and chill for about 4 hours. Done and done.

Years later, I do now have a car…But, no vanity plates. Instead, I allow the DMV to assign me a plate and then I make up a meaning for the letters I get. My first license plates read:

911 URE = Emergency! You Are Excellent.

My next was:

411 XPC = For Your Information. You’re Extra Pretty-Cute.

You can really interpret them anyway you want. Maybe, on my car NOPCME would mean: Numerous Organic Produce Creates More Elegance…in a Peas and More Pea Soup.

Creamy and Delicious

My friends who live in LA sleep at night with an Earthquake Go-Bag under their beds. This includes heavy bottomed shoes (I think because LA gals sleep in stilettos), water, cash, canned food, flashlight etc. Everything they might need to evacuate quickly and survive for a few days following a devastating quake.

Over the holidays at Henri Bendel they were selling NYC emergency kits. Similar to the California quake kit…only very different. Instead of canned beans and a flashlight, it includes a metro card, hair bands, breath freshener, bandages, deodorant towelettes, pain relievers and some other girl stuff…

I’m not really sure what our emergency kit vs the CA one says. Maybe in New York waking up smelly, gently wounded and needing to take the subway constitutes an ’emergency’. It might. It’s no earthquake, but it is an emergency and Henri Bendel has the solution.

For people who cook, that go-bag or emergency kit translates to a go-meal; one that is ready to serve with very little notice…

At about 6pm on New Year’s Eve after a champagne boozy lunch, my friends decided that they would come over to my apartment for dinner. OK. I had :65 minutes to prepare for the arrival of hungry guests.

I went to my go-to’s and quickly shopped for what I would need to prepare Chicken Milanese, salad, garlic bread, pasta…

And, luckily, I had a go-soup in my fridge. The day before I tweaked an Ina Garten recipe and made…

Cream of Tomato Soup (serves 6-7)

Ingredients

    3 TBSP olive oil

  • 1 Red Onion Diced
  • 2 large Carrots Peeled and Diced
  • 1 Sweet Potato – peeled, diced and roasted
  • 2 Cloves Garlic Minced
  • 6-7 Medium vine-ripened tomatoes Chopped
  • 1 TSP Sugar
  • 1/2 TBSP Amore Tomato Paste
  • Ina garten tomato soup

    365 Brand Chicken Stock

    1/4 Cup Chopped Fresh Basil Leaves

  • 3 Cups Chicken Stock – I used Whole Foods 365 Brand – I know I know, I should make my own…but didn’t
  • 1/2 TBSP Kosher Salt
  • 1 TSP Freshly Ground Pepper
  • 3/4 Cup Heavy Cream at room temperature

Preheat the oven to 425 degrees

1. Heat the olive oil in a large pot over medium/low heat. I used my Le Creuset 6 qt one – it’s just so pretty and so easy to clean!

2. Add the onions and carrots and saute until very tender – be patient, this takes a while – :15-:17 mins.

– In hindsight, I would have chopped the carrots smaller so that they might soften more quickly.

3. While that’s happening…Place the diced sweet potatoes on a sheet pan lined with Reynold’s Wrap Pan Lining Paper in one layer and sprinkle with olive oil. DO NOT SALT.

4. Put in the oven and roast for :10mins – Toss and then roast an additional :05-:07 mins until tender. Remove from the oven and set aside.

5. Into the Le Creuset – Add the minced garlic to the softened onion and carrots and saute until fragrant – about 1 minute

6. Add the tomatoes, roasted sweet potatoes, sugar, tomato paste, basil, chicken stock, salt and pepper and stir well.

7. Bring the soup to a boil, reduce to a simmer and cook uncovered for :40mins – until the tomatoes are very tender

8. Add the cream to the soup and stir

9. If you have an immersion blender…great…But since I don’t – I set up a blending station by the stove on my counter

NOTE: Ina used her food mill…but, seriously, in my apt – no room for a food mill.

10. Most importantly…LET THE SOUP COOL before blending. Cuz like if you put hot soup in a blender and turn it on, it will blow the top off and there will be quasi blended hot soup everywhere…

11. In stages, ladle some of the soup into the blender and puree until smooth.

12. Transfer the pureed soup into a second soup pot and keep warm

13. Repeat until all of the soup is smooth and creamy

Kick it up a bit…

NOTE: If you like it spicy….Add a dash or two of Gindo’s Spice of Life Fresh and Spicy Pepper Sauce.

The soup was a great intro to the Chicken Milanese. And, with my ‘stick your head out the window-view’ of the Central Park fireworks and the impromptu late night dance party…The last-minute dinner party was a success.

I don’t have much of a need for the Henri Bendel NYC Emergency Kit because – and I’m not judging – I don’t tend to wake up slightly wounded, smelly and not at home…but a good batch of emergency go-soup in the fridge does come in handy.

New Year’s Resolution – Finish What You Start: Bleu Cheese Mashed and Potato Pancakes

Some people have a hard time finishing things. I, myself, have added ‘finish the books I start’ to my list of New Year’s Resolutions. It just happens – maybe you grew bored of the thing you’ve started or maybe you think it’s taking too long to get to the good parts of 50 Shades of Grey – whatever the reason, certain tasks just aren’t completed.

It’s hard to believe that this could happen with something as delectable as mashed potatoes. But it does. You made too much of the stuff. You didn’t know that some of your dinner guests are strict carnivores or veggie-free. They don’t eat side dishes. They didn’t show. Or, God forbid, they just don’t like potatoes!

Regardless of how it happened, you might find yourself left with a bowlful of cold, rapidly aging mashed potatoes in your fridge following such a party.

If you’re like most Americans…You’ve probably had a mashed potato or two in the past four weeks. One way to avoid having leftover mashed potatoes is to doctor them up a bit – make something unexpected out of the expected.

Bleu Cheese Mashed Potatoes (Serves 8)

Ingredients:

  • 4 lbs Yukon Gold potatoes – washed and quartered…no need to peel
  • 1/2 Cup of Breakstone’s Sour Cream at room temperature
  • 1/2 Cup of heavy whipping cream
  • 6 TBSP of butter
  • 8 oz of crumbled bleu cheese
  • Salt and Pepper

1. Place the potatoes in a large stock pot and cover with water – enough water so that the water is at least two inches higher than the potatoes

Note: If, like most of us…You want to get ahead and cut the potatoes early…Just keep them in a large stock pot covered with ice water – this will keep them from turning an icky brown color

2. Bring the pot of potato filled water to a boil

3. Reduce to a simmer and cook until potatoes are fork tender – about 15 minutes

4. In a separate saucepan, heat the cream and butter

5. Drain the potatoes and then place them back into the still hot stock pot. This helps to steam the extra water out of the potatoes so you don’t get watery mashed potatoes

6. Using a masher, ricer or fork, mash the potatoes to your own desired consistency – I like ’em pretty smooth

7. While mashing, ricing or forking, add the warmed milk/butter and whip in

8. Add in the sour cream and bleu cheese and mix until well combined

9. Add salt and pepper to taste

10. Serve immediately OR (thank you, Rachael Ray) you can put the mashed bleu cheese potato mixture in a separate bowl, cover and place over a bowl of simmering water on the stove top and keep warm for up to an hour or more. Shut the front door!

Now….In spite of how fab and different this potato dish was…it’s the next day and your lame non-mashed potato eating friends couldn’t finish this tasty side dish. Sure, you could toss the extra mashed potatoes…But in the spirit of the New Year and finishing what you start…Get creative and make…

Potato Pancakes (serves 4)

Ingredients:

  • Whatever left over mashed potatoes you have, but at least 2 1/2 cups with ratio of other ingredients below
  • 1/3 Cup of Breakstone’s Sour Cream
  • 1/4 Cup of Bisquick Baking Mix
  • 1 Egg
  • 1 TSP of sugar – you can leave this out, but it really helps to crisp up the edges of the pancakes
  • Butter for frying

1. Bring the mashed potatoes, Sour Cream and egg to room temperature

2. To the bowl of leftover mashed potatoes, add the sour cream, egg, sugar and Bisquick and mix to well combined.

NOTE: eyeball the consistency – you want it somewhat thick – not as thin as pancakes. Depending upon how much of the mashed potatoes you have left over, you may need to add a little more baking mix or another egg.

3. Heat the butter in a large skillet over med/high heat – you can use vegetable oil/canola oil as well…just not olive oil

4. Drop pancake-y sized dollops of the mixture into the hot skillet and fry until lightly golden brown on one side

5. Flip the pancakes and fry the second side

6. Serve warm as a fab day two side dish….Or for breakfast – but, I wouldn’t put syrup on these…Just a little butter, maybe a chive or two would be great.

Some things prove harder to finish than others. But, you can get creative. For me, maybe that means finishing the books I start by watching the movie. Don’t judge, the end result is the same. To finish off your mashed potatoes, try whipping up a day two side dish of potato pancakes.

Avoid the Party Pooper: Serve a Party Popper

Let’s just face it…every party has a pooper. Just the way it is. Sometimes she’s the low-talking dinner party guest seated next to you – You start with a lot of ‘Excuse me?’ and ‘I’m sorry, what did you say?’ and then at some point you give up and just start nodding and agreeing. You may be agreeing to a 5am yoga class or the absolute NYC No-No: a ride to the airport…But, at a certain point, you can’t hear, give up and resign yourself to the polite nod.

Sometimes he’s the bah-humbug type who monopolizes you during the cocktail hour. You know, ‘the city is so crowded with holiday revelers’, ‘the weather is terrible’, ‘I just don’t FEEL like Christmas’ etc.

She’s the food hater. The wine snob. The terrible gifter – the one who brings a clearly despised re-gift or a coffee mug filled with jelly beans – what?

There’s just always one.

One way to avoid being monopolized by the party pooper is to provide yourself with an escape route. Bring an appetizer that needs some care – escape to the kitchen. And, if you really need an out – even if there’s a waiter there – offer to serve the hors d’oeuvres.

One of my favorite passed hors d’oeuvres is the Spinach Party Popper –  much better than a pooper!

Spinach Parmesan Party Poppers (makes 20)

Ingredients:

    1 10 oz package of Birdseye frozen chopped spinach – defrosted and squeezed dry of excess water

  • 3 large eggs gently beaten
  • 1/2 medium onion grated or minced
  • 3 TBSP butter melted
  • 1/2 Cup Parmesan cheese – grated
  • 1 Cup Progresso Italian Style bread crumbs

Always in my freezer

Preheat oven to 350 degrees

1. In a microwave safe bowl, defrost the spinach – about 6 minutes on high stirring halfway through the process

2. Using a dishtowel – squeeze out the excess water from the spinach

Allow the spinach to cool a bit…

3. In a bowl, mix together the spinach, eggs, onion, butter, parmesan cheese and bread crumbs

4. Using a small (melon ball sized) scoop, make balls from the mixture and put onto a rimmed baking sheet lined with Reynold’s Wrap pan lining paper

5. Bake for 20 – 22 minutes – just until the balls are firm

6. You can either serve immediately…Or, if you need a party escape: allow to cool, transfer to a travel container and take to your next holiday party. Just reheat for about :10mins on 300 before serving

Even if you are not expecting a party pooper at your next holiday event, the spinach party poppers are a perfect passed hors d’oeuvre. And, because they are vegetarian, a crowd pleaser: They might even make a Scrooge smile, and, as far as you’ll know, they’re a favorite of low-talkers everywhere.

A Twist of Spice: Spicy French Onion Soup

The other day I read an article or – ok, let’s be honest – saw something on TV – about how quickly the spice can fade out of a relationship. One very important authority – ok, it was Dr. Oz (but if it’s good enough for Oprah, it’s good enough for me) estimated that the spice is gone within three years. He went on to say that the only way to stay in a relationship is to continue to spice things up.

Something to think about. But, since this isn’t ‘that kind’ of blog – we’ll leave that type of spicing up and talk about the benefits of eating spices instead.

And, luckily, Dr. Oz talks food spices and herbs as well. Cayenne pepper, for example, can boost your metabolism and help you lose weight more quickly. Ginger and mustard have a similar effect.

There are also herbs and spices that as per the good Doc, can help you combat aging and fight against disease and make you smarter.

One of my favorite and not too crazy of herbs, Thyme, can help you fend off MRSA and is used in mouthwash to help treat throat inflammations and in cough drops to fend off throat infections.

I’m not a huge fan of the super spicy – again, we’re talking edible spices, this is a food/food stories blog after all. I mean, I have been accused of being sassy and maybe even a little bit saucy…but no one has every called my cooking too spicy. I try to include spices and flavors that will please all my reader(s). Like, even though I don’t love garlic (and neither does Ina, btw), I will include almost the entire directed amount prescribed by a given recipe…Ok, to be honest, I usually sub out 1/2 the garlic and replace it with a sweet shallot. I’m trying.

But, it’s time…and I’ve decided to step out of my comfort zone and try to spice things up a bit.

And, as per Dr. Oz, I may be getting thinner AND healthier at the same time!

Spicy French Onion Soup (serves 2-4)

  • Gindo's Spice of Life pepper sauce

    Metabolism Speeders

    1 TBSP Butter

  • 2 Medium Sweet Onions sliced thin with the grain – so you have onion strips. I had to stare at the onion for like a long time to figure this out…
  • Salt and Pepper
  • 1 TSP Flour
  • 1/3 C of Red Wine
  • 1 TSP Fresh Thyme
  • 1 TBSP fresh Lemon Juice – really good add by Melissa D’Arabian who recommended just a teaspoon. So good an idea that I added more!
  • 1 Bay Leaf
  • 1/2 TSP Gindo’s Red Pepper Sauce
  • 1 1/4 C Beef Stock – I use Kitchen Basics because it comes in the smaller sizes and I didn’t need a 33oz box
  • 1 1/2 C Chicken Stock
  • 1/2 C Grated Swiss Cheese – if you’re feeling fancy, get gruyere…but it’s pricey and the Kraft shredded swiss is also good
  • 1 – 2 TBSP Grated Parmesan Cheese
  • 1 Baguette Slice for each bowl of soup. Sliced about 1/2 inch thick and lightly toasted. I buy the petite baguettes at Food Emporium…But, really, you could just toast up any hearty bread you might have on hand…

1. In a large saucepan – I used my 4qt All-Clad soup pot with the copper core – because I love it – melt the butter over med/low heat

2. Stir in the onions, add salt and pepper and cover

3. WAIT – like forever – though get in there and stir them around every :15 mins or so

4. After about :90 mins, the onions should be a lovely brown and caramelized. If they’re not…send a tweet to Melissa D’Arabian and ask her for tips to speeding the process. She will tweet you back ‘Time :-)’. So, I gave it more time.

5. Once the onions are caramelized, turn up the heat to medium and stir in the flour….cook for about a minute or so.

6. Add in the wine to deglaze the pan. Use a wooden spoon to scrape all of the oniony-goodness from the bottom of the pan

7. Add in the thyme, lemon, a bay leaf….And, this is where I got all spicy…the Gindo’s Fresh and Spicy Pepper Sauce – I used the red one, but either the green or red will do here.

8. Add both the beef stock AND the chicken stock, stir and bring to a boil, reduce to a simmer (BTB/RTS)

9. Simmer for :10 mins

10. Ladle the soup into 2 – 4 sassy french onion soup bowls….Or, in my case, an oversized ramekin. (note, if you are thinking of Christmas gifts for me and want to try this soup..well, you know)

11. Top the soup with a single slice of the toasted baguette

12. Top each baguette with a heap of the swiss cheese and a sprinkle of the parmesan cheese

13. Put the soup bowls on a rimmed baking sheet and into the oven on Full BROIL

14. Broil just until the cheese is cheesy – bubbly and beginning to brown

Serve while piping hot…and spicy!

I’m not a big fan of the spicy foods. And, people who douse their meals in hot sauce have always baffled me…I mean, how can they really taste what’s going on when it’s overpowered by hotness?

But, it’s good to step out of your comfort zone once and maybe more than once in a while and spice things up a bit. And, listen, if it’s making me thinner AND fighting off a sore throat…I’m like totally in and willing to give the other type of spice a try.
